We make our vodka exclusively with winter wheat — an ode to the longstanding tradition of distilling the beverage. But we’re driven by more than just tradition, travelling the world in search of the best ingredients. And we found that only winter wheat produces a spirit that is mellow, well-rounded, and smooth as velvet.
We know exactly where every single grain of wheat in our distillation stills comes from. We planted it, and we watched it grow… for a whole year. It’s only slightly more fun than watching paint dry, but it speaks to our commitment to the craft.
Our wheat is grown at the estate itself. It’s a family holding, where quality precedes yield, because we understand that vodka begins from the soil, and lives through the grain, until it finally matures into spirit.
No one touches our vodka, except us. Well, before you drink it, of course. We carry out every single step of the process ourselves: From cultivating grain, through hauling water from deep on-site wells, right up to filtering the spirit through black pearls. And since our vodka is so damn good, we take great pains to ensure that every batch is equal to the very first.
We don’t distill our vodka just once, twice, or even ten times. We distill it for as long as it takes, in a continuous distillation process, until there’s nothing left but absolutely pure spirit with indetectable levels of methanol.
And just to make things that much more decadent, we finish D’YAVOL vodka by filtering it through black pearls. These rare organic gemstones ensure that the spirit in your glass is entirely devoid of impurities, whilst retaining its inherent flavor and velvety mouthfeel. Yes, we use real pearls. No, we don’t sell them.
